Set in the breathtaking Karijini National Park, this dinner is more than just a meal. Each dish is crafted using local ingredients, combining traditional techniques with modern methods. Zach’s cooking honours the ancestors of this land, connecting each bite to the stories and traditions of Indigenous culture.
Throughout the evening, Zach will share insights into his culinary journey, the inspiration behind his dishes, and his work as an advocate for mental health in the hospitality industry. His dedication to creating opportunities and promoting inclusion brings depth to this experience. The night will also feature an acoustic set from a renowned Indigenous musician.

As Co-Founder and Culinary Lead at Iluka's Hospitality, Zach manages food and beverage operations at venues like Iluka's Kitchen, Iluka's Cafe, The Little Starfish Cafe, and Westend Seafood Shack. He collaborates with Indigenous communities to support their rights and interests, creating sustainable opportunities.
Zach also advocates for mental health awareness in hospitality, believing in providing second chances and employment opportunities within his team.
